Could you share pictures of this plant and show us what is truly looks like? I see a lot of contradicting information about its color. Is it pink, brownish, kind of red actually?
The color really depends on the light level. It can be anything from super bright pink in high light to green in low light or shady areas. I think a lot of the confusion comes from people taking pictures in exaggerated light spectra or editing pictures to make the color pop out more. I personally have never seen it brown and it's clearly not red when placed next to a legitimately red plant.
Bright pink under high light at the surface of the tank. It's not difficult to get this color throughout the entire stem if you have decent lighting.
In a lower light tank it was a light pinkish color.
For me it's always been a light pink color. You can see it here in the middle of this picture. Clearly not red like the ludwigia sp red mini just to it's right or the Barclaya Longifolia just to the left.
But of course that's in my tank in my conditions. Others experience may vary.
Mine has truly always been pink. Not red. Which is awesome. It's a beautiful plant, but it was the single fastest grower in my tank so I had to remove it for my sanity. It was an absolute beast.
I never tried trimming into a bush specifically but I’m sure you can. For me - it always ended up very “leggy” and with the right nutrient balance, it grows like crazy.
This is what it looked like most of the time for me.
You'd need quite a large tank to be able to nicely trim it, I think! Like @BrownieGhost said, despite your best efforts it is a large, fast-growing, sometimes leggy plant. You could keep it in a rough bush shape for sure, but not for long.
