Blyxa Japonica or Eriocaulon Vietnam ?

For me: it depends!
Blyxa grows so quickly and branches so easily that it fills space nicely. It can outgrow its space and crowd neighbours though.
E. Vietnam behaves itself so well it can be a true foreground/front of midground plant. It holds its own against aggressive neighbours too, so can border any plant.
Blyxa colours up nicely, although I do love the rich green of Vietnam.

TLDR: both are great plants! Which one depends on where in the tank you’re planting it, how much height and width you need and whether you want a splash of colour or a green block!

Agree with Jackson!
Blyxa is an all-time favorite of mine:

It's actually a stem plant with really bushy leaves. Grows way faster than E Vietnam, so if you mess up or get algae, it can bounce back much faster.

If you check out @CincyScaper's Journal here, you can see how nitrate limiting and/or high light turns blyxa japonica a bronze color:

You might want that, or you might not. Depends on your setup.

E Vietnam grows much slower and usually stays smaller, but can also get quite large if you let it. It has true dark green leaves even under high light. See this tank at 3:45.

Some gorgeous tanks in that shop! The one you highlighted is lightly planted but still amazing.

This shop (Aquashow Poland) is what convinced me to get a Skylight Hyperspot F light! They use them on all tanks.

Here's my fav Aquashow video by MJ:

They use lots of E Vietnam. The tank at 4:16 is my favorite in their whole gallery:
