Got 3 AI Prime 16HD fresh water versions over my 125 gallon tank that is 72in long and 22in tall. At the end of the day I am not happy with them. About to pull the trigger on two Week Aqua L900 K PRO's that are 35in long for a total for 70in coverage on my 125Gal. Thought's concerns?

By those numbers, the assumption is, your front to back depth is about 18-18.5 inches. I would say the Week Aqua will be just fine. If hanging, you'll probably run the lights at a higher setting to get good par at the substrate for a tank of that height, especially if growing carpeting plants. Perhaps other with tall tanks and Week Aqua lights can chime in at what settings they run.
I was running a Week Aqua L600 over my standard 75 gallon tank (48" L x 18"W x 21" H) for a couple months. It was not nearly long enough for full coverage but I had to make do with it until I could get my P1200 shipped from China.
I set it up with this janky little rig and used the photone app on my phone to measure PAR. At 100% output power of the light, I measured about 120 PAR directly underneath it at the bottom glass. Moving away from the center of the light, it was only about 50 PAR at the corners since the light was so short.
With your plan to use two for length, you should be good to go for growing any carpets or stems in good health and coloration but you probably wont get to 200 PAR or anything if you're looking to get 2hr Aquarist-level results.
